Low carb broccoli bread

Not sure about you, but one of the things I miss the most when on Atkins is bread, not just on it's own, which I used to love, but also sandwiches and toast and cheese on toast and well I miss every way you can eat it! Also, it feels like on Atkins you can eat lots of good sandwich fillings but the only thing you're missing is the bread as you have nothing to eat all those lovely fillings with, apart from lettuce, which I do sometimes use as a bread substitute, but more of that another time...

I found this recipe whilst looking for recipes which use protein powder as I had bought lots and wasn't sure what to use it with, and the recipe originally came from here

It is very simply to make, as long as you have the ingredients in, which you very probably won't as I did have to buy a few of them! 

You will need:


  • Broccoli - needs to be half a cup once cooked, but I did use much more than that, I used a cup which is about 6 medium sized florets
  • Eggs- 2 whole eggs and half a cup of egg whites. half a cup of egg whites equates to the egg whites from 4 medium sized eggs. 
  • Pea protein- half a cup. Now I definitely don't normally keep this in and had to buy it specially.
  • Unflavoured whey protein-half a cup as well. You can get this from lots of places, mine came from Holland and Barrett.
After that, it's quite easy:
  • Steam or boil the broccoli
  • Add the broccoli, whey protein, pea protein, egg whites and egg to a food processor and blend untill it is smooth, though I did struggle to get it completely smooth, there were a few small bits of broccoli that just wouldn't blend out. You will not get something the consistency of dough like you usually would when making bread, you are instead looking for something that is more like cake mix. 
  • Just pour into a slightly greased loaf tin. 
  • Put into the oven at 200 degrees and cook for about 35 minutes until it has risen (though mine only rose slightly-as below)

  • The loaf should then come out of the tin very easily, mine did, but I did use a silicone loaf tin. 
  • Enjoy! If you like it, that is, I will be honest and say that I am still not sure about the taste, you can taste the broccoli which is slightly off putting, but it definitely does slice up like bread does so you could make sandwiches with it, and presumably toast as well, though I haven't tried this yet!




The whole loaf apparently contains:
603.5 calories
113.2g protein
10.5g fat
5g fibre
and 15.7g carbs!
