Low carb open sandwiches


I love sandwiches, and bread in general, which is not good news when you're avoiding carbs. I was so pleased then, when I perfected making low carb bread, and I now love that so much that I don't really miss 'normal' bread. It's so good in fact, that the other half will even eat it, which is saying something as he has pretty set tastes in the bread department!

One thing about the bread though is that it's pretty tough to cut it very thinly which makes making traditional sandwiches quite difficult. Instead then, I eat a lot of open sandwiches, ie a piece (or pieces if I'm being honest) of bread cut quite thickly then piled high with toppings.

Here are a few of the toppings I've been enjoying recently...

 Philadelphia soft cheese, sliced cherry tomatoes, basil, pink salt and black pepper.

These last two are the ones I eat the most; mashed avocado, lemon juice, chilli flakes, Greek basil and chopped tomatoes.

Tomatoes you will note feature pretty heavily in these (and most of my posts at the moment), this is because as I write this in late September, my tomato plants are giving me tomatoes nearly daily and I am having to use them in everything! A nice problem to have though!

  2. I love sandwiches like this! I always pile them really high with toppings unroll they're too high to put any more bread on top!

  3. I love avocado toast! But i've not tried soft cheese before, will give that a try!
