Low carb pancakes- eggfast friendly


I literally cannot believe it's pancake day again and that it's a year since I posted this lemon and rose pancake cake. This year I didn't have quite as much time on my hands and therefore opted for something a little more understated but equally delicious! 

These pancakes are super super low carb, they only have two ingredients which makes them eggfast friendly (if you're careful with what you serve them with). Here because the pancakes are so low carb, I had lots of carbs left for some fruit and nuts, and a dollop of Greek Yoghurt. The syrup is a no sugar one so it has no carbs, and I got it when I was last in America, they seem to have it everywhere there but I've never seen it in the UK. 


I won't post the recipe again as you can see it on the low carb pancake cake post. This time though, instead of making larger crepe style pancakes, I wasnted thicker, American styles ones so I kept the recipe the same but poured some mixture in the centre of a pan then used a spatula to push the edges in and keep it in a circle, then fried for a few minutes before flipping.


If you are egg fasting, as I know a lot of people who come here are, you could serve this with sugar free syrup, or sprinkle with cinnamon and sweetener. You will forget you're not eating normal style pancakes.

  1. Yum! what a lovely pancake recipe I like how low carb they are. Will be saving the recipe from next year and trying it out soon. I had no idea it was a pancake day until yesterday when I was told (but some how I made them myself this week twice (once on the actual pancake day) after many months of not having any. Well my heart asked for them even when my brain forgot! I will be back soon to check out all your lovely and healthy recipes! You are a great inspiration :)
