Courgette, mint and goats cheese fritters

I had the nicest lunch this week at Ethos foods, a delicious vegetarian buffet just off Oxford Street. They do the nicest courgette and cheddar fritters and I've been obsessing about them ever since I went, so today being a weekend when I have much more time on my hands, I thought I'd have a go at recreating them. I opted for goats cheese rather than cheddar as that's what I had in, and also I had decided to pop mint in and felt like goats cheese would be a better match.



I wasn't disappointed, and even though these are more time consuming to make than most things I do, they are so worth it and the mixture makes lots so you'll have plenty left over.


Let's crack on with it then:


  • 2 courgettes
  • 2 eggs 
  • 1/2 a cup almond meal
  • 2 tablespoons of Psylium husk
  • 50g goats cheese 
  • A handful of mint leaves 

To make:
  • First grate the courgettes and put them in a colander over the sink with some salt and let them drain for ten minutes or so. Not much liquid will come out. 
  • Chop the mint leaves and then add them along with the rest of the ingredients to a mixing bowl
  • Add the courgettes and mix well together
  • Heat some oil in a frying pan and take big spoonfuls of the mixture and fry for about 5 minutes on before flipping over and cooking on the other side. This is obviously pretty time consuming so if you can do a few in the same pan it will make it all quicker. I fit four into the pan
  • Remove and enjoy, they're good hot and cold and I'm sure they'll keep in the fridge for a few days, if you haven't eaten them before that!

    1. Hi, I'm not too sure where you can get it in Ireland, but they sell it in Holland and Barrett if you have that there? otherwise most health food shops. Hope that helps! x

  2. These look so good- I have seen akmilar recipes but they always had flour in them so I am really happy to see a recipe without any grains! I am trying these!
