Eggfast friendly egg drop soup

I've been meaning to share this recipe for so long as it's pretty much my go to snack/meal for when I'm in a big rush and want something I can whip up in a few minutes. It's also way more filling than it may sound, very low in carbs and calories and suitable if you're eggfasting! It also needs only two ingredients so I pretty much always have everything on hand to make it.

You will need (make two cups):
  • Two cups of vegetable stock- choose the one that is lowest in carbs that you can find.  If you're not vegetarian you can of course use a meat broth/ stock which will be even lower still
  • One egg, beaten in a cup
To make it:
  • Pop your stock in a saucepan and bring gently to the boil
  • Slowly pour your beaten egg into the stock, pouring it through a fork to break it up
  • Once it's all combined, season, serve and enjoy!

As you can see, it's super super simple and tastes really really good! It reminds me of sweetcorn soup you might get at a Chinese just without the sweetcorn!
I've left it really simple with just the two ingredients as I know lots of people here will be following the eggfast, but if you aren't you can add chopped spring onions or mushrooms or some extra spices, but you really don't need to, it's great as it is.

I'm not posting that often at the moment as I'm in the process of moving both house and job, but hope to be back on it very soon. In the meantime if you are doing the eggfast then why not check out my egg chips, mini meringues or egg clouds, they're the most popular recipes on the blog!

Cruelty free beauty- Frownies

My mum has used frownies forever, she'll probably object to me telling you this so that sentence may well disappear, but for now there it is. They seem to be one of those funny product that so many people use but no one has ever heard of.
