I got this idea the other week after making a big no crust pizza (again recipe coming very soon), and I had lots left over and had the idea of blending it with some stock and seeing what happened. So to cut a long story short, I did that very thing and absolutely loved how it turned out, so I played around with it so you don't have to make the bake first and just had to share it!
Like most soups it's pretty easy and doesn't need many ingredients, you could add in anything else you normally add to a pizza and I'm sure it would be lovely.
So, I'll get to it, here's what you need:
- One small onion-chopped
- Two cloves of garlic- crushed
- A handful of basil
- A cup of mozzarella cheese
- A tablespoon of dried oregano/ fresh would also work in which case a small handful would do
- Tablespoons of sundried tomato puree (lower in carbs than normal tomato puree)
- Two handfuls of fresh tomatoes- roughly chopped
- 400ml water
- Seasoning
- Olive oil to fry
To make it, I used my Blendtec which just makes it so much quicker but a normal food processor would also work.
- Fry off the onion and garlic until transparent
- Add the rest of the ingredients to the Blendtec, though leave a little cheese, chopped tomato and some herbs to garnish
- Add to the Blendtec and pop on the soup setting and blend until you see steam
- Serve and garnish (gazpacho style) with the remaining cheese, chopped tomatoes and herbs.

Pizza is a staple of me and I have it every week at least once. We even have it for starter at home before our mains we love it so much. This is a very clever idea but I would need to be trying it, and I will do just that very soon.
ReplyDeleteThis looks so delicious! I love pizza sooo much but I haven't had any in a long time because I've stopped eating dairy. Plus gluten free pizza just isn't as good as the real thing. If vegan cheese works well in this, then I can finally taste pizza again even if it's just in soup form
