Low carb, vegan cashew coffee

Well autumn seems to have well and truly hit so I thought I'd pop something slightly more warming than the frozen cocktails I've been posting about more recently. This is a great option for a lovely frothy coffee that's low in carbs and high in energy! It happens to taste pretty lovely too.

I have been experimenting more and more with using cashews as a cream/ milk substitute, partly because I bought them in quite large quantities for some reason recently, but also because I have been using them in a few different ways as they make things taste so lovely and creamy.
You will need a high speed blender, as always I use my trusty Blendtec, but a Vitamix would also work. Without this sort of blender you will be left with small bits of nuts in your coffee and you really don't want that!
You will need (makes two cups):
  • 2 servings of coffee (2 cups)
  • 1/2 cup of cashews- I use the bags of cashew bits as they'll be blended up anyway but any cashews will do! If you have a bit more time on your hands to could roast the cashews first with a small pinch of sea salt (and maybe some honey/ natural sweetener of your choice) to take the flavour to a whole other level.
To make it:
  • Make your coffee, I used my Nespresso but you could make yours however you usually would do, add your sweetener of choice at this point and stir in, if you usually have your coffee sweetened
  • Add it to your blender jug along with the nuts 
  • Turn the blender on a low setting and start blending, gradually increasing it until you're at the high setting. 
  • Blend for around a minute in total, with around half of that time being on the higher/ highest setting
  • Serve and enjoy immediately!
I am going to experiment to see if this also works cold with ice, but have yet to try this so really can't vouch for whether it works or not, if you do try please let me know! I hope you love it, I know I'm going to be drinking lots of these this autumn/ winter!

  6. I tried this but there were quite big lumps of nuts in it...... do you sieve it? I have checked and you don't say that you do?
