Low carb frozen lemon champagne cocktails



So Christmas seemed to come and go so so fast and it's now New Year tomorrow, how did that happen?! I thought I'd share a quick cocktail idea of you're trying to keep sugar low but fancy drinking something special! These really are delicous so I think you'll love them. I've had lots of positive feedback on all of those so hopefully you'll find something you like!


I've served them in these beautiful champagne saucers from the White company that I got for Christmas , as I'd been dying to use them for the last few days! They are unfortunately no longer in stock, however these LSA ones are very similar, and these are a cheaper alternative and I've had my eye on these for ages! I also used my trusty blendtec to get the ice super smooth and almost sorbet like!

Making them, as with all of my cocktails is super easy and takes only minutes.
To make two you will need (though I would double this and do enough for four as they're good and pretty virtuous...)

  • Two big handfuls of ice
  • Two lemons 
  • 250ml champagne/ prosecco/ cava
  • Some lemon/ mint to garnish- not essential but a nice touch if you're entertaining


To make them:

  • Pop your ice into a blender
  • Remove all the skin from your lemons and pop the flesh also into the blender, removing the seeds first
  • You can add a little sweetener, either agave, powdered sweetener, honey etc if you wish, but i didn't
  • Blend until smooth and almost slushy
  • Add to your glass
  • Top up with champagne
  • Garnish
  • Enjoy and have a lovely lovely New Years, whatever you're doing!

  6. Oh so I made these a few days ago but my slushy mix was a lot clearer than yours. How big lemons did you use? Also did your slush stuff go completely smooth or was it a bit lumpy?? Pls reply, want to get these perfect!!

    1. I used pretty average sized lemons, I'm sure the colour doesn't matter too much- maybe use a touch less ice next time? Mine was pretty smooth, what type of blender did you use? xx

  9. Hi, how much difference does a higher speed blender make? I am very tempted by a Vitamix or a Blendtec but don;t know if they would be worth the money or if I would use it enough (or just use it at the start then get bored!). Do you use your for lots of things? would really appreciate your help!!

    1. To be honest they do make a big big difference. I use mine all the time, for dips, sauces, soups and cocktails and they just make it all so much quicker. If you can afford to I would invest and sell your old one, they save so much time, wish I'd got one ages ago!xx
