Well summer is basically upon us here in the UK and that principally means two things:
1. I am trying to eat better as summer means baring more skin, and
2. I want to eat colder, more summery foods.
As a result of the above I set about thinking of a low carb, healthy ice cream recipe and after much playing about I came up with the following.

This is a super simple recipe that is so quick to whip up (if you deduct the freezing time but that doesn't really count!), I used my Blendtec but you can use whatever high speed food processor you have- though I would really recommend mine as it's so powerful and makes everything so easy.
You only need very few ingredients. To make about 1 litre of ice cream you will need:
- 2 medium/ large avocados
- 500ml cream (I have tried single and double and both work)/ coconut cream
- 50g cacao powder- unsweetened cocoa powder would also work
- 50g sweetener- whichever is your preferred, you could also use a dash of honey/ agave if you prefer.
Then to make it, it's super simple:
- Pop all of the ingredients in the food processor and blend until smooth and creamy.
- Have a taste and add more of the sweetener if you prefer.
- Pop it into a tub, I just used an old ice cream tub but anything freezable would do
- Freeze overnight, or for less time if you prefer it softer or are generally impatient!
- Enjoy
