Low carb pizza soup

I have been getting so so into pizza things recently. What are pizza things you might wonder? Well by pizza things I mean anything that tastes anything like pizza, for example aubergine pizzas, pizza bakes (which I plan to share with you very soon) ad so on. Now of course I would always rather eat actual pizza, but when the craving hits sometimes something with the taste of pizza is enough to satisfy it.

I got this idea the other week after making a big no crust pizza (again recipe coming very soon), and I had lots left over and had the idea of blending it with some stock and seeing what happened. So to cut a long story short, I did that very thing and absolutely loved how it turned out, so I played around with it so you don't have to make the bake first and just had to share it!

Like most soups it's pretty easy and doesn't need many ingredients, you could add in anything else you normally add to a pizza and I'm sure it would be lovely.

So, I'll get to it, here's what you need:
  • One small onion-chopped
  • Two cloves of garlic- crushed
  • A handful of basil
  • A cup of mozzarella cheese
  • A tablespoon of dried oregano/ fresh would also work in which case a small handful would do
  • Tablespoons of sundried tomato puree (lower in carbs than normal tomato puree)
  • Two handfuls of fresh tomatoes- roughly chopped
  • 400ml water
  • Seasoning
  • Olive oil to fry
To make it, I used my Blendtec which just makes it so much quicker but a normal food processor would also work.
  • Fry off the onion and garlic until transparent
  • Add the rest of the ingredients to the Blendtec, though leave a little cheese, chopped tomato and some herbs to garnish
  • Add to the Blendtec and pop on the soup setting and blend until you see steam
  • Serve and garnish (gazpacho style) with the remaining cheese, chopped tomatoes and herbs.
If you prefer it a bit chunky you could of course keep half of the ingredients out and add them  towards the end, none of the ingredients require a huge amount of cooking so this would work fine as the rest of the ingredients would warm them through

I hope you love this, I've got another post planned for this week as I've finally got round to shooting a cruelty free beauty post so hope you like that too!

  3. Pizza soup sounds like something I need in my life! Thank you for this.

  4. Pizza is a staple of me and I have it every week at least once. We even have it for starter at home before our mains we love it so much. This is a very clever idea but I would need to be trying it, and I will do just that very soon.

  5. This looks so delicious! I love pizza sooo much but I haven't had any in a long time because I've stopped eating dairy. Plus gluten free pizza just isn't as good as the real thing. If vegan cheese works well in this, then I can finally taste pizza again even if it's just in soup form
