I wasn't disappointed, and even though these are more time consuming to make than most things I do, they are so worth it and the mixture makes lots so you'll have plenty left over.
Let's crack on with it then:
- 2 courgettes
- 2 eggs
- 1/2 a cup almond meal
- 2 tablespoons of Psylium husk
- 50g goats cheese
- A handful of mint leaves
To make:
- First grate the courgettes and put them in a colander over the sink with some salt and let them drain for ten minutes or so. Not much liquid will come out.
- Chop the mint leaves and then add them along with the rest of the ingredients to a mixing bowl
- Add the courgettes and mix well together
- Heat some oil in a frying pan and take big spoonfuls of the mixture and fry for about 5 minutes on before flipping over and cooking on the other side. This is obviously pretty time consuming so if you can do a few in the same pan it will make it all quicker. I fit four into the pan
- Remove and enjoy, they're good hot and cold and I'm sure they'll keep in the fridge for a few days, if you haven't eaten them before that!
